Abstract

The purpose of this study was to evaluate the quality of Carica Papaya cv. Exotika by applying post-harvest handling treatments and storage for five weeks. C papaya cv. Exotica was bought at Wet Market Sandakan, Sabah. Three postharvest handling treatments ( hydrocooling ,a combination of hydrocooling and hot water , and hot water ) was used in which each treatment had three replicates and stored for a period of five weeks in a cool room ( 10 ±3° C). Quality of C. papaya cv. Exotica was studied during the first, second and third week of storage in the Postharvest lab, SPL. The study found that hot water treatment for C. papaya cv. Exotica has experienced the highest weight loss of 2: 21 ± 0.93% compared from other treatments. For moisture content and the soluble solids content, has been found to show the highest reading for hydrocooling treatment which are 88.51 ± 1.64 % and 2.40 ± 0.72 *Brix respectively . The combination hydrocooling and hot water treatment have demonstrated retention of the best quality of firmness (1: 41 ± 0.12 kgf) and ascorbic acid content (50.83 ± 16: 35 mg/100 ml) compared with hydrocooling treatment and hot water treatment. The study also found that C papaya cv. Exotica lose weight ; moisture content ; soluble solids content ; solidity ; ascorbic acid respectively vary between 0.91±0.69 and 1.89±0.71%; 89.33±0.96,88.04±1.13 and 87.49±0.93%; 2.78±0.74,2.20±0.28 and 1.73±0.18°Brix; 1.51±0.18 and 1.28±0.21 kgf; 52.50±27.01 and 35.16±5.97 mg/100 ml The study has found that combination treatment of hydrocooling and hot water is beneficial in maintaining the postharvest quality of C. papaya cv. Exotica during storage. The results also show the first week storage period to benefit the quality of C papaya cv. Exotica.
