Abstract

Cymbopogon citratus were analyzed for total phenolic content and antioxidant activities and its effect of different infusion conditions, including infusion duration, infusion's water temperature and multiple extractions of C. citratus. Folin-Ciocalteu's reagent was used to determine total phenolic content (TPC). The antioxidant activities were evaluated based on two assays namely 2,2-diphenyl-1-picryhydrazyl (DPPH) radical scavenging activity assay which measured the scavenging activity of extracts and ferric reducing antioxidant power (FRAP) assay which measured the reducing ability of extract under acidic condition. It was found that TPC in C. citratus infusion increased with infusion time from 3 minutes, 5 minutes, 10 minutes to 15 minutes, while TPC of 30 minutes extracts was decreasing. Hence, 15 minutes extracted the highest TPC in C. citratus. DPPH radical scavenging activity and FRAP also showed similar result as TPC in which extraction time of 15 minutes yielded the highest antioxidant activity. The data obtained revealed that infusion with 100°C water extracted the highest TPC and antioxidant activity compared to 60°C and 80°C. the TPC and antioxidant activity decreased Significantly from first extraction to second extraction and to third extraction.
