This study was designated to examine the antimicrobial and antioxidant activities of banana inflorescence. The bracts and buds of banana inflorescence species Musa acuminata AA cv. Sucrier (pisang mas) were obtained from different locations, namely Donggongon, Keningau and Tenom. The samples were sun dried and oven dried at temperature 40°C, 60°C and 80°C until the moisture content reached approximately 10% before being individually extracted by using hexane, ethyl acetate, acetone, methanol and water. Extracts were screened for antimicrobial activity by using well diffusion method where crude methanolic extracts of buds dried at temperature 400C had the highest inhibition against Bacillus cereus at 22.00 mm while the Minimum Bactericidal Concentration (MBC) value was 0.65 mg/ml and the Minimum Inhibitory Concentration (MIC) value was 0.45 mg/ml. Methanolic extracts also exhibited high total phenolic content of 31.22 mg GAE/g. Antioxidant activity was determined by using 2,2-diphenyl-l-picrylhydrazyl (DPPH), JH:arotene bleaching test, FRAP and ABTS assay. Methanolic extract showed high ECso value of 0.39 mg/ml in DPPH. The same extracts also showed high reducing power of 3.33 μmol/g of iron (ll) sulphate equivalent at 1 mg/ml in FRAP assay and 0.35 and 0.33 μmol/g of Trolox equivalent in ABTS assay. However, in kinetic study of p-carotene bleaching test, water extract of buds samples dried at 800( exhibited better antioxidant activity than methanolic extracts. Antimicrobial activity was correlated with total phenolic contents and two of the antioxidant test assay (ABTS and FRAP assay). Total phenolic content was found correlated with EC₅₀, ABTS and FRAP assay but no correlation with β-carotene bleaching assay. Thus, banana inflorescence exhibit both antimicrobial and antioxidant activities.
