Abstract

The aim of present study was to determine the effect of different drying methods (Freeze drying, oven dried at 70°C, oven dried at 50°C and sun dried) on carotenoids, flavonoids and vitamin C content of local edible seaweeds (K. alvarezii, C. lentilifera and S. polycystum). Total carotenoids, total flavonoids and vitamin (content was determination by using UV-Vis Spectrophotometer. However, the individual carotenoids compound (beta-carotene and lutein), individual flavonoids compound (quercetin and kaempferol), and catechin compounds (epicatechin, catechin hydrate, epigallocatechin gallate, epigallocatechin, epicatechin gallate) have been identified and quantified by High Performanced Liquid (hromatogram with (18 reversed phase column. Among the drying treatments, freeze drying had retained greater amount of carotenoids, flavonoids and vitamin C content compared to oven dried at 70°C, 50°C and sun dried. In comparable of oven dried at 50°C and 70°C, oven dried at 70°C was found to retain greater amounts of total carotenoids, total flavonoids, and vitamin C compared to oven dried at 50°C, Whereas, epicatechin and epigallocatechin gallate shown better result in oven dried at 50°C than oven dried at 70°C, Sun dried had retained the least amount of carotenoids, flavonoids and Vitamin C content compared to freeze drying and oven drying. As a conclusion, freeze drying was superior compared to oven drying at 50°C , 70°C and sun drying to retain the carotenoids, beta-carotene, lutein, flavonoids, epicatechin, epigallocatechin gallate and ascorbic acid content.
