Abstract

Rice is an important food in the world especially in Asia. There are two types of rice cultivars; wetland and upland rice. Different rice varieties have different physicochemical characteristics. There were six varieties (8eruang, 8erutan, Mansud, Padi Tiga Bulan, Ronguol and Sinangawan) of upland paddy that had been tested in this study. All the upland rice were obtain from Ranau, Sabah since people in Ranau cultivated more upland rice compare to other areas in Sabah. Chi-square test had been conducted and physicochemical characteristics among the six varieties were significantly different at confident level p<0.05. Several factors had been detected which contributes to the differences amylose content, gelatinization temperature and gel consistency in rice grains such as genetic, and environmental conditions.
