Abstract

Quantitative analysis of vitamin C and some minerals (i.e. Ca, Mg, Fe, Na, K, Zn and P) in carrots which cultivated in Australia, China and Kundasang had been carried out. Result showed that the content of Ca, Mg, Fe, Na, K, Zn, P and vitamin C in Australia carrot is 33.8 ± 0.3 mg, 18.3 ± 0.4 mg, 0.73 ± 0.007 mg, 74.0 ± 0.3 mg, 243 ± 2 mg, 0.60 ± 0.003 mg, 5.50 ± 0.13 mg and 8.7 ± 0.7 mg per 100 g, respectively; while in China carrot is 32.1 ± 0.2 mg, 16.1 ± 0.3 mg, 0.88 ± 0.01 mg, 72.8 ± 0.5 mg, 241 ± 4mg, 0.37 ± 0.001 mg, 6.47 ± 0.08 mg and 6.6 ± 0.6 mg per 100 g respectively. Finally the content of Ca, Mg, Fe, Na, K, Zn, P and vitamin C in Kundasang carrot is 29.8 ± 0.3 mg, 15.4 ± 0.3 mg, 0.68 ± 0.01 mg, 66.8 ± 0.6 mg, 234 ± 2 mg, 0.46 ± 0.02 mg, 6.08 ± 0.03 mg and 5.3 ± 0.4 mg per 100 g, respectively. Comparison of the results show that the different of composition in Australia carrot, China carrot and Kundasang carrot is significant except K. Results showed that Australia carrot contained higher nutritive value compare to China carrot and Kundasang carrot.
