Abstract

Nutrition knowledge may not accurately be assessed due to poorly designed nutrition knowledge measurements. Proper questionnaires should be developed but due to time constraints, limitation in expertise, resources and difficulty in comparing past studies' results, they have not been done. The main objective was to develop a valid and reliable nutritional knowledge questionnaire for the use among undergraduate students in Malaysia, as there were none published validated questionnaire for Malaysians to test a broad range of nutrition knowledge for adults. The initial stage involved the development of conceptual framework and identification of concepts, with consultation with nutritional experts. Existing developed 50 questions, with a pool of 201 items were tested and in turn only 36 questionnaires, with a pool of 151 items remained. Items in the questionnaire were discussed and amended, to suit the dietary habits of Malaysians. Items which were found potentially ambiguous were also taken out from the questionnaire. This was done to ensure content and content validity of the items. The 151 items were constructed into booklet questionnaire and piloted for appropriateness and understanding by potential pilot test subjects. Questionnaire (n=151) was re-assessed to determine the internal consistency reliability. One hundred sixty-five subjects were recruited in this study to complete the questionnaire at the piloting stage. The final 31 questions (n= 134) displayed a satisfactory Cronbach's value of 0.70. A nutritional knowledge questionnaire with construct, content validities and internal consistency was developed for use in Malaysia to evaluate their nutritional knowledge.
