Abstract

The objective of this research were to detenninate the glycaemic index of selected Malaysian's Chinese food by diabetes patients, study the blood glucose respondent of Chinese food, and to assess the food habits of respondent diabetes patient. This study was carried out on 100 diabetes patients at Outpatient Luyang Clinic. Ten types of Chinese foods which were fried rice, chicken porridge, fried kuih-teow, fried mee-hoon, red bean soup, dumpling red bean, yam kuih, layer kuih, yao-cha-kue and ham-chi-peng were selected as sample. Methodologies that used in this research were standard method and dietary assessment. Glusometer had been use to detennine glycaemic index. The result of this study showed that glycaemic index of fried kuih-teow is 55.10±1.73 and fried rice is 57.20±1.69, chicken pomdge is 65.70±1.70, yam kuih is 66.70±1.82, layer kuih is 68.10±1.91, yao-cha-kue is 71.40±1.58, dumpling red bean is 72.10±2.28, ham-chi-peng is 75.40±1.71, red bean soup is 76.00±1.83 and fried mee-hoon is 85.80±1.62. The ANOVA result show that fried mee-hoon is significan (p<0.05) with other sample foods. Blood glucose responden had rise with significant (p<0.05) at 30 minutes, rise to top on 60 minutes, started drop on 90 minutes and drop again on 120 minutes after responden ate each sampel. From the 24-hours recall, min calori intake are 1449.5 ± 468.46 kcal which 195.68g (54.2%) from carbohidrate, 71.11g (19.6%) protein, dan 42.08g (26.2%) from fat. Diet respondent are fulfill the requisement of diet diabetes which 50-60% carbohidrate 10-20% protein dan 30% fat. There were about 85 (85%)respondent were were changing their diet to low sugar, low salt, low cholesterol and low calori diet to control their blood glucose. Kuih-teow, fried rice, chicken porridge, yam kuih and layer kuih is middle high glycaemic index food and yao-cha-kue, dumpling red bean, ham-chi-peng, red bean soup, and fried mee-hoon is high glycaemic index food.
